Oats is one of the most nutrition dense foods which makes it easily qualify as super-food. It is also gluten free. Eating oats regularly has several benefits such as weight loss, lower blood sugar levels and a reduced risk of heart disease.
I have been regularly consuming oats since last 4 years and there is no better way to start your day than this. Well cooked oats porridge is also a good baby food. My 7month old loves it.
My love for oats have grown so much that I keep trying new recipes using oats instead of wheat flour or semolina. I wanted to write this piece since a long time as a lot of people have asked me about how I consume oats. I thought I will share my most favorite oats recipes-
·         Overnight oatmeal breakfast

All these recipes use whole wheat flour (wherever needed) instead of all purpose flour and are made without eggs.
Banana Oats Muffins
I will now share the recipe for Banana Oats Muffins. The best thing about this recipe is that it can be made with very little or no sugar so that makes it little more healthy. It is one of the easiest recipes. It goes perfectly well with you morning tea or coffee.
Banana Oats Muffins

Ingredients-
1 cup whole wheat flour
1 cup instant oats
1 teaspoon baking powder
0.5 teaspoon baking soda
1 teaspoon vanilla essence
2-3 ripe bananas(more ripe the bananas are lesser sugar you will need)
A pinch of salt
Dry fruits like walnuts(optional)
0.5 cup any neutral oil
0.5 cup sugar(you can add more or less depending on how sweet do you want the muffins)
Preparation
-Preheat the oven to 180° C.
-Grease the baking tray.
-Mix all the dry ingredients.
-Mix oil and sugar so that the sugar dissolves. Add mashed bananas and vanilla essence to this mixture.
-Mix everything (both dry and wet ingredients together) and fold. Do not over mix. If you feel the batter is little dry then add 2-3 tablespoons milk.
-Transfer the batter to the baking tray.
-Now bake it for 25-30min. Do the toothpick test. If it is done let the muffins cool for some time.
-Serve with tea or coffee.
